Chocolate Tiger Roll Cake

Another trial on swiss roll. This is a good recipe and it produces good roll. I roll the cake while it was still hot and let it cool. It didn't crack at all but the problem came when I was unrolling the cake to spread some strawberry jam. The cake was starting to crack and stuck to the paper...I was panicked but luckily I still had another layer of cake to wrap around.

Cake roll

300 grm egg whites

225 grm caster sugar (I reduced the sugar)

1/2 tsp cream of tartar

135 ml vegetable oil

140 grm flour

35 grm corn flour

25 grm cocoa powder

125 grm egg yolks

Tiger roll

125 grm egg yolks

10 corn flour

50 grm caster sugar

15 ml vegetable oil

strawberry jam/any spread you prefer

1. Beat egg whites and cream of tartar to soft peak. Add sugar in few stages and keep on beating until stiff peak. Leave it aside.

2. In low speed beat milk and oil. At medium speed, beat in flour, corn flour, and cocoa powder. Slowly add in egg yolk and keep on beating at high speed until thick and fluffy.

3. Using spatula slowly add in the egg whites mixture into the flour mixture. Make sure they all mix well.

4. Pour the mixture into a 30x30cm prepared pan. Bake in 200C oven for 15 minutes or until cook.

5. Remove from oven and unmold the cake into the non stick mat. Roll and let it cool. Once cool spread

the strawberry jam and re-rolled the cake.

6. Tiger roll: Beat eggs and sugar until thick and fluffy. Slowly add in corn flour.

7. Add oil into the mixture and mix well.

8. Pour the mixture into a 30x40x2cm prepared pan. Bake in 200C oven for 5 minutes or until golden brown.

9. Removed from oven and un-mold. Spread jam and put the cake roll onto the tiger roll then roll the tiger roll over the cake. Let it cool and ready to serve.

Say It with Roses

These cupcakes were jaffa flavour (jaffa is similar to mud cake but it uses freshly squeeze orange juice and orange rind. It tastes much better than mud cake). All decorations were fondant.

The cupcakes were covered with ivory fondant then decorated with small flowers in ivory and light pink. The purple roses were the main decoration.

These cupcake were iced with swiss meringue buttercream coloured in purple and decorated with ivory fondant roses and some cachous. In my opinion, swiss meringue buttercream taste better than buttercream. They are less sweet and taste better (they kind of melt in the mouth).

Roses...always represent romantic, mystery, love and beauty. I love roses, love looking at them and love making them.

I have been practicing making roses but never get it perfect...I want them to look real. The more I do the more I know how 'Mighty is our God'...There are thousand or even million types of flowers that God created with just one command. The roses that I made were petal by petal and they still not perfect. I feel so small and my God is so big...but I feel secure that I have such a Mighty God that love me and protect me. Cookies gift box

Cookies can always be a beautiful gift for any occasions whether is christmas, birthday or even wedding. Cookies are easy to make and the shelf life is longer than cakes. I made these cookies as birthday gift to a very special friend of mine. She is a lady that has both inner and outer beauty...she always smiles no matter what happen. So I made her some bright coloured daisy that represent her life...bright and always brings happiness to other people.

These were simple butter cookies with orange flavour.

I decorated these cookies with fondant. There were 2 different pink tone...can't really see the different :-)

The finished product. 4 different colours orange, yellow, pink and purple (for the back ground) finished up with gold ribbon.

Cake for the Ladies

This was a birthday cake for my mother-in-law and my sister-in-law. Cake for 2 ladies, so I made some decorations that were more feminine. All decorations were made of fondant.

This is my first attempt in making fondant shoe. It is a red high heel shoe. I always love high heel althought I don't like wearing it. For me, women in high heel look really elegant and sexy. Too bad that wearing them is really killing me...:-) but making it was real fun. I decorated the shoe with some swarovski crystals.

For the matching purse, I made a Chanel ivory purse with black logo.

The cake was a green tea cake, it was light and fluffy. I didn't cover the cake in fondant.

Samuel's Birthday

Sam is 6 already...I still cannot believe that my little baby is no longer a baby...he's a boy now a big boy. He's grown into a lovely young man. He always has his own opinion...he is a strong will boy that sometimes listen to others' advise. I enjoy raising him although sometimes I don't...:-)

Recently, Sam really curious about universe so for his birthday I made him a 'Mars' planet with some aliens.
The cake was dark chocolate mud cake ganache with dark chocolate and covered with fondant.

'Once upon a time, there was an astronaut that lost in space whose name was Samuel. He involved in a space racing game with an alien named Audrey. With his rocket ship, Samuel defeated Audrey that rode in her UFO.
There were many aliens in the audience to cheer them up. '

Mother's day cake 2

Mother's day cake for my mum. This is my first attempt in making 'bag cake'...it was fun. At first, I thought the carving was going to be disaster but luckily it wasn't. The cake was also a gluten free cake with no butter or any oil. But the cake was not dry instead it was very moisture and soft. Love the texture and taste and of course it is healthy with the goodness of almond and orange. Yumm...

I used 5 inch round almond orange cake ganached in dark chocolate for ganache covered with fondant. Firstly, I rolled the grey fondant into a long sausage then I measure the length for the bag handle. With toothpick, I marked 2 holes on each side of the handle. and let it dry on the plate. I covered the whole cake with fondant then I cut the bag lid and place it on top of the bag. Later, I pushed 2 toothpicks half way into the cake for holding the handle. The buckle was cut out fondant painted in golden lustre.

For details, I marked some pattern on the bag with toothpick. Assembled the handle and finished the join with long thin sausage painted in golden lustre. For final touched, I attached a fondant rose and buckle. My mum loves it and the kids tried to carry the bag...it was so funny.

Mother's day cake

First of all, Happy mother's day to all mums...
Yesterday was the day when mostly every mothers received their special treatment a part from their birthday. On Friday, I received a cup of sweet treats from my son that he bought it from his school stall. When I picked him up on Friday, he ran to me and give me a bear hug and handed me the gift. He said, ' Mummy this is for you and can I please share with you?' I was surprised where did he get the money? I forgot to give him pocket money that morning. He told me that his teacher gave him the money so he could buy gift for me. Luckily, his teacher was very thoughtful. Sam was sad that all of his friends had money to buy gifts but not him. I was so touched and guilty that I was so unsensitive about my son's feeling. But now Sam is happy and to show his appreciation to his teacher, we made his teacher some sushi for lunch and everyone are happy...:-)

This is a cake that I made for our doctors...they are good doctors that doing their jobs for loves. They show loves to their patients. They even share God's gospel with their patients. May God bless them and give them good health.

This is a gluten and butter free cake. This is a very healthy cake using almond meal, 2 whole oranges, eggs, and sugar. Syrup and covered with fondant. All decorations were made of fondant.
